1 cup orange juice
1/4 cup candy cap syrup (recipe on page 219)
1/4 cup soy sauce
1/2 to 1 teaspoon hot sauce, or to taste
1/2 teaspoon dried ginger or 1 teaspoon fresh minced ginger
Combine the above ingredients, and marinate a pork roast, chicken or duck in it in the refrigerator, turning twice a day, for 3 days. Bake or cook in crock pot, in the marinade, which may be thickened for a sauce to serve with it, skimming extra grease off first, if necessary.
