2 large red potatoes, peeled if desired
2 strips bacon
2 tablespoons minced onions
½ cup fresh candy cap mushrooms
2 cloves garlic, minced
¼ cup milk or half and half
1 tablespoon butter
½ teaspoon salt or to taste
Cut up potatoes, and put them into a saucepan with a little water. Boil them until tender.
Meanwhile, mince the bacon and sauté it in a frying pan. When the bacon is done, pour off the excess grease and spread the bacon on a paper towel to drain. Sauté the onions in the remaining bacon grease in the pan, until golden and caramelized. Remove from pan to bowl. Turn the heat down to low. Then mince the candy caps and sauté them until just fragrant (be careful not to overcook them as they lose their flavor), adding a little more bacon grease to the pan, if necessary. Add them to the onions. Sauté the garlic until just fragrant, and add them to the onions, also.
Drain and mash the potatoes. Mix in the butter and milk, the bacon, onions, mushrooms and garlic. Salt to taste. Serve immediately, with extra butter or sour cream.
