Morels are excellent in the recipe for Mashed Potatoes on page 131, in any of the gravy recipes, in either of the stuffed mushroom recipes on p. 138, replacing the Boletus in the Risotto recipe on p. 140, in Kasha on p. 142, and in the Mushroom Rice Stuffing on p. 147.
Had a great time at the McCloud Mushroom Festival. More artsy than I expected, but fun. The concept of spring mushrooms is a bit bizarre to me, as we really don't have many here. Brought home some morels, with the intention of inventing some morel recipes, which we will post on this blog, and will have in the 2nd volume, if and when we make one.
