Here's what I did with the particularly large, beautiful ones I found a couple days ago.

1 tablespoon oil (less if the meat is fatty)
1/4 onion, chopped
1 cup chopped broccoli
1/2 cup chopped pork (or other meat or tofu)
2 cloves garlic, minced
2 slices ginger, minced
2 tablespoons soy sauce
1/2 cup sliced sweetbread mushrooms
1/4 cup diced tofu
1/4 teaspoon toasted sesame oil
Heat the oil in a large skillet or wok with a lid, until it is hot, but not smoking. Add the onion and broccoli, cover, turn the burner down to medium-low, and allow to steam for 5 minutes, or until the broccoli is bright green, but not really cooked yet. Add the pork, and stir-fry until the pork is cooked on the outside. add the garlic, ginger, soy sauce and mushroom. Stir until the mushrooms soften, then add the tofu.
