Serves 2
1/3 onion, chopped
1 cup torn chanterelles
1 tablespoon olive oil
1/4 teaspoon rosemary
1/2 teaspoon oregano
1/2 teaspoon thyme
1 teaspoon lemon balm
Pinch nutmeg
2 cloves garlic
1/4 pound hamburger
1/4 cup white wine
3/4 cup sour cream
2 tablespoons grated Parmesan cheese
1/2 teaspoon salt or to taste
Pepper to taste
Egg noodles for two
Start the water for the noodles.
Saute the onion and mushroom in the olive oil, in a frying pan. When the onion becomes translucent, mince or crumble and add the herbs. Mince and add the garlic.
Put the noodles in to boil.
Add the hamburger to the mixture in the frying pan. Continue to saute until the hamburger is barely cooked through, then add the wine. Cook down until the wine has evaporated. Stir in the sour cream, cheese and salt and pepper. Cook until the sour cream has heated through, serve over the drained noodles. May be garnished with additional Parmesan cheese, or minced parsley or chives.
